What does it mean to “rack” wine? 🍇 This is our Petite Pearl, just post-fermentation. After pressing, we let it settle for a few days, then it’s time to rack. That means gently transferring the wine off the gross lees (the heavy sediment made up of dead yeast cells and grape solids) and into a clean tank, leaving the murky stuff behind. The goal? Cleaner wine, better texture, and fewer off-flavors. We’ll pitch malolactic bacteria next to kick off secondary fermentation, and from there, this win
